On my new game PC I haven't installed Java yet. Do I need it for something essential? Will certain websites not work without it?

If you don't need it, don't install it. If you run into a situation where you need Java, you can always download it.

Yup. I have it on my "sim machine" as it is needed for non-sim stuff. No harm, IMHO.

I need Java mostly for OpenOffice (most probably LibreOffice with the next update), Compass&Ruler and a couple of Java games.

F1 Live Timing, for example. And many scientific sites with interactive plots, schematics or physics simulations.
