Will triple screen be supported... and, what kind of ?
As I can see on youtube, in Shift 2, a very wide view is used and causes an image stretched on the side shields...
Very wide FOV with stretched edges (http://www.youtube.com/watch?v=U3MBHM2ZZmw)
F1 2010, the stretch strikes back... (http://www.youtube.com/watch?v=-BEJ0sPseik)
It will be interesting to use a "MultiView" as in rFactor (1.250 patch for rFactor) and iRacing, which use three viewports with standard FOV instead of one viewport with very wide FOV and the possibility to adjust the angle of the screens in the menu, bezel compensation, etc.
Three standard FOV in rFactor (http://www.youtube.com/watch?v=-glJOwCAhMg)

There's a 99+% chance that C.A.R.S. will support surround and eyeinfinity. It's standard fair for modern racing games now. The trick will be building in some additional support for it like iRacing has. In iRacing, there are additional features that improve the way it looks, for instance by accounting for the angle of your "side" monitors and rendering each monitor separately so there is no wierd stretching of the image.
I've never tried the 3D stuff. I can't see how that would be worthwhile.

It does support :)

it does support but its pretty rubbish like 99.9% of games.
it just strecthes the image over the 2 side monitors which looks ugly and is very unhelpful in judging how close you are to a car alongside you.
iracing and live for speed are the only games which do PROPER tripple screen support where they render each screen separately and thus you have zero stretching of the image and you better able to judge how close you are to drivers alongside you.

I would imagine that SMS will want to go the iRacing route to triple monitor support. We should push for that in future iterations. I sub to iRacing and I have to say that it is really terrific how they've implemented it. I even got a tape measure and a protractor out to do the measurements.
I'm very glad that AMD and Nvidia have new GPUs coming in a few months. C.A.R.S. will be demanding on a single monitor and will likely crush GPUs into crying little girls on triple monitor setups.
I think an over clocked 2600K should be more than enough CPU power to run it on triple monitor at full detail, but the video is going to be a different story. I wonder how closely Griff can interact with Nvidia and AMD. Instead of having the situation they did with Shift 2, it would be great to get started on that partnering early so that drivers can be evolving along with the game engine.
I've seen that interview where Carmack decried the inability to code directly to the hardware, but he said that there are efforts afoot to remedy that to some degree. Will that happen during the development cycle of C.A.R.S.? I hope so, and since it's obvious C.A.R.S. is going to be the benchmark that every other driving sim is judged against when it's released, it would be in Nvidia and AMD's interest to be as involved as possible.

I wrote Bell on two or three occasions, all of which were ignored. Here's the reality: Three screen users of racing games represent approximately 25% of the sim racing demographic - and it's growing at a rapid rate. Yes, I have done my homework. I have three screens, an i5/6950 system and am an active member of iRacing. I spend money...and I operate a full time concern servicing the sim racing community - you may have seen my goodies.
Anyhow, iRacing and LFS do three screens wonderfully, and how they do it is not simply by offering to run at an Eyefinity resolution. They do it because each screen has its own FOV and, in the case of iRacing, are rendered individually.
See this screen shot of the graphics configuration in iRacing taken from my installation:

The details for three screens are entered in the top part. If this CARS project doesn't do three screens even close like this, then they dropped the ball in a big way. Why? Well, there is no edge warping in iRacing and very little in LFS. For a racing sim to neglect this in 2011 is irresponsible.

I'm using a HD5850 with 3x1680x1050 running at 124fps ish in iRacing (low to medium settings). Will absolutely not touch C.A.R.S. if they won't support proper triple screen. The immersion factor is just that important for me.

Just ran Tripple screens just then. Was a big hit on frames! Turned everything off in CCC and turned of shadows within game and frames went to a playable level.
I don't think the three screen "experience" was that bad at all, but certainly will need the addition of being able to tweak it and run 3 screens rendered separately. Maybe if I was lapping with others then it would be more of an issue.

Full triple screen support will be essential for the game yes, and so will happen. I agree iRacing does it very well.
If this is some added peace of mind...

There are threads on the forums about triple screens, no doubt better support will be looked into at some point. I shouldn't worry.

are you kidding? give it a try!
its amazing, you can actually see and feel the road directly in front of you rolling under the bonnet and depth perception is so much better!
its incredible and I really hope more racing games FULLY support it!
